I didn’t think the buttermilk pancakes David made a few weeks ago could get any better, but I was wrong. They can. And all that’s needed is one ripe banana.
It was the perfect BC Day treat!

I love banana pancakes! They’re so good you don’t even need syrup. When I make them I usually mash the bananas up in the batter, that way you get a little sweetness in every bite.

I have yet to try making banana pancakes on my own, but I had banana pancakes at a local brunch place the other day, served with huckleberry syrup. They were divine. Sadly, they were also far too big for me to consume in one sitting, so I brought them home and had the leftovers for an afternoon snack. Since I didn’t have any of the huckleberry syrup, I had to use my homemade strawberry syrup. Which, as it turns out, it also divine.
